Peanut Butter and Jelly Cheesecake Delight
1/2 cup strawberry jelly or jam
1/4 cup creamy peanut butter, melted
Directions:
Preheat your oven to 325°F (163°C). Grease a 9-inch springform pan.
In a medium bowl, combine graham cracker crumbs, sugar, and melted butter. Press mixture into the bottom of the prepared pan.
In a large bowl, beat the cream cheese until smooth. Add peanut butter, sugar, and vanilla extract; beat until well combined.
Add eggs one at a time, beating after each addition just until blended.
Pour the filling over the crust and smooth the top.
Bake for 55-60 minutes or until the center is set. Cool on a wire rack for 10 minutes, then run a knife around the edge of the pan to loosen; cool 1 hour longer. Refrigerate overnight.
Before serving, spread the jelly over the top of the cheesecake. Drizzle melted peanut butter over the jelly in a decorative pattern.
