Peaches and Cream Pie

Preheat your oven to 375°F (190°C).
Prepare the pie crust according to the package instructions or use a homemade crust. Place it in a 9-inch pie dish.
In a large bowl, combine the sliced peaches, granulated sugar, cornstarch, ground cinnamon, and vanilla extract. Mix gently until the peaches are well coated.
Pour the peach mixture into the prepared pie crust, spreading it evenly.
Bake in the preheated oven for 35-40 minutes or until the crust is golden brown and the peaches are tender.
Allow the pie to cool to room temperature.
In a separate bowl, whip the heavy cream and powdered sugar until stiff peaks form.
Once the pie has cooled, spread the whipped cream over the top.
Garnish with fresh mint leaves before serving.
