Ingredients: 2 large eggplants 1 cup couscous 1 1/4 cups vegetable broth 1 tablespoon olive oil 1 onion, finely chopped 2 cloves garlic, minced 1 cup cherry tomatoes, halved 1/4 cup fresh parsley, chopped 1/4 cup fresh mint, chopped 1/4 cup fresh basil, chopped Salt and pepper to taste 1/4 cup crumbled feta cheese (optional)
