Mushroom and Brie Baked Eggs

Preheat your oven to 350°F (175°C).
In a skillet, heat olive oil over medium heat. Add garlic and mushrooms, sautéing until mushrooms are golden and soft, about 5-7 minutes.
Place the sautéed mushrooms evenly in two small baking dishes. Top with slices of Brie cheese.
Crack two eggs into each dish over the mushrooms and Brie.
Season with salt and pepper, and sprinkle with chopped parsley.
Place the baking dishes in the oven and bake for 12-15 minutes, or until the egg whites are set but yolks remain runny.
Serve hot, directly from the oven.
