Add the salmon cubes to the bowl and gently toss to coat them evenly with the marinade.
Arrange the salmon bites on the prepared baking sheet in a single layer.
Bake in the preheated oven for 10-12 minutes, or until the salmon is cooked through and flakes easily with a fork.
Remove from the oven and sprinkle with fresh cilantro, if using, before serving.
Variations & Tips
For a milder version, reduce the chili powder or substitute it with smoked paprika for a smoky flavor. If you have picky eaters, you can serve the salmon bites with a side of honey mustard or ranch dressing for dipping. For an extra crunch, try coating the salmon bites with crushed pork rinds before baking. You can also add a touch of sweetness by including a teaspoon of honey or maple syrup in the marinade.
