These White Chocolate Peanut Cookie Bars are a decadent and easy-to-make treat that combines the crunch of roasted peanuts, the sweetness of white chocolate, and the spicy flavor of Biscoff cookies. Ingredients
Roasted Peanuts: about 1 1/4 cups (200g)
Biscoff Cookies (or any other favorite cookie): 200g
White Chocolate: 200g (for filling) + 200g (for topping)
Whipping Cream: ~1/2 cup (100ml)
Lotus Biscoff or Nutella Spread (optional, for topping): 1 tbsp
Instructions
Peel Peanuts
Roughly chop 200g roasted peanuts in a food processor or with a knife.
Crush the cookies
Roughly grind the Biscoff biscuits in a food processor or place in a plastic bag and crush with a rolling pin.
Melt the chocolate and cream
In a double boiler or microwave, melt 200g white chocolate with 1/2 cup (100ml) whipping cream until smooth.
Assemble the mixture
In a bowl, mix together the chopped peanuts, crushed biscuits and melted chocolate mixture.
Spread the mixture evenly in a 28cm x 18cm baking dish lined with baking paper.
Cool the mixture
Chill for 30 minutes to allow the base to set.
White chocolate topping
After 30 minutes, melt the remaining 200g white chocolate. Pour it over the cooled mixture in the baking dish, spreading it evenly.
Topping (optional)
Melt 1 tablespoon of Lotus Biscoff or Nutella spread and drizzle over the top for an extra layer of flavor and decoration.
Final Chill
Chill until chocolate filling hardens (about 15-20 minutes at ).
