Ingredients:
For the filet mignon:
1 pork filet mignon (about 500 g)
6-8 slices bacon or smoked bacon
2 tbsp olive oil
1 tbsp butter
Salt and pepper
For the cream sauce:
1 shallot, finely chopped
1 clove garlic, minced
200 ml single cream (full-fat or light)
100 ml chicken stock
1 tbsp mustard (optional)
1 tsp flour (to thicken if necessary)
Fresh parsley, chopped, for garnish
Side dish:
Green vegetables (optional): parsley, green beans, or green salad
