4 potatoes of medium size, peel them and grate them.

1 small onion, finely chopped.

2 eggs, beaten gently

1/4 cup of regular flour

1 small spoon of salt

1/2 teaspoon of ground black pepper

1/2 teaspoon of baking powder

Oil for frying vegetables

Instructions

1. Put the shredded potatoes and onions in a clean kitchen towel and press to remove all the liquid you can. This makes the pancakes very crunchy.

In a big bowl, mix the shredded potatoes and onion with the whisked eggs.

Mix the flour, salt, pepper, and baking powder together until they are well combined.

Heat a small amount of vegetable oil in a big pan on medium-high heat until it starts to shine.

Put large spoonfuls of the potato mixture into the hot oil, pressing them down a bit with the back of the spoon to make pancakes.

Cook each pancake for 3-4 minutes on both sides until they are golden brown and crispy.

Move the cooked pancakes to a plate with a paper towel to remove extra oil.

Enjoy it hot with the toppings or side dishes you like best.

Different Types and Advice

For a fun variation, include 1/2 cup of grated cheddar or Parmesan cheese in the mashed potatoes. If your children are picky eaters, you can secretly add some finely grated zucchini or carrots to boost their nutrition. If you want to eat fewer carbs, consider using a combination of grated potatoes and cauliflower to make these pancakes. For people who enjoy some heat, adding a little cayenne pepper or finely chopped jalapeƱos can make the pancakes more exciting.
