Vegan French Toast Recipe

In a shallow mixing bowl, whisk together the unsweetened almond milk, cornstarch or arrowroot powder, nutritional yeast (if using), maple syrup, ground cinnamon, vanilla extract, and a pinch of salt until well combined. This mixture serves as the vegan egg replacement.
Heat a non-stick skillet or griddle over medium heat and add a little coconut oil or vegan butter to coat the surface.
Dip each slice of bread into the almond milk mixture, ensuring both sides are coated, but do not soak the bread excessively.
Place the soaked bread slices on the hot skillet and cook for approximately 2-3 minutes on each side, or until they turn golden brown and slightly crispy.
Remove the cooked vegan French toast from the skillet and keep it warm while you cook the remaining slices.
Serve the vegan French toast with your preferred toppings, such as fresh berries, sliced bananas, a drizzle of maple syrup, vegan whipped cream, or chopped nuts.
