2 bagels, halved and toasted
1 medium onion, thinly sliced
1 tablespoon butter
1 teaspoon olive oil
1 tablespoon brown sugar
1 teaspoon balsamic vinegar
1 pear, thinly sliced
1 apple, thinly sliced
4 slices sharp cheddar cheese
Salt and pepper to taste
Directions
Heat a medium-sized skillet over medium heat and add the butter and olive oil.
Once the butter has melted, add the thinly sliced onions and a pinch of salt. Cook, stirring occasionally, for about 10 minutes until the onions start to soften.
Add the brown sugar and balsamic vinegar to the onions. Continue to cook for another 10-15 minutes, stirring frequently, until the onions are deeply caramelized. Remove from heat and set aside.
Take the toasted bagel halves and layer each bottom half with a slice of sharp cheddar cheese, followed by a layer of pear slices, apple slices, and a generous spoonful of caramelized onions.
Top each with another slice of cheddar cheese and cover with the top bagel half.
Place the prepared sandwiches onto a preheated pan or griddle over medium heat. Press down gently with a spatula and cook for about 2-3 minutes on each side, or until the cheese is melted and the bagel is golden brown.
Remove from heat, cut each sandwich in half if desired, and serve warm.
