Sausage, Gravy, and Biscuit Pie

Preheat oven to 375°F (190°C).
In a skillet, cook sausage over medium heat until browned and crumbled. Remove sausage from skillet and set aside.
In the same skillet, melt butter. Whisk in flour until smooth. Gradually add milk, whisking continuously until thickened. Season with salt and pepper.
Cut biscuits into quarters and place half of them in the bottom of a greased baking dish.
Spread cooked sausage over the biscuit layer. Pour gravy over sausage. Top with remaining biscuit pieces.
Bake for 25 minutes. Sprinkle with shredded cheese, and bake for an additional 5 minutes or until biscuits are golden and cheese is melted.
Garnish with chopped parsley before serving.
