Pomegranate Mousse Parfait

In a small saucepan, combine the pomegranate juice and granulated sugar. Heat over medium heat until the sugar dissolves, stirring occasionally.
Sprinkle the gelatin over the mixture and let it sit for 5 minutes to soften.
Heat the mixture again until the gelatin dissolves completely. Remove from heat and let it cool to room temperature.
In a large bowl, beat the heavy cream with the powdered sugar and vanilla extract until stiff peaks form.
Gradually fold the pomegranate mixture into the whipped cream until well combined.
Layer the pomegranate mousse and pomegranate seeds in serving glasses or parfait cups.
Chill in the refrigerator for at least 2 hours before serving.
Garnish with fresh mint leaves before serving.
