Cut the passion fruits in half and scoop the pulp into a cocktail shaker.
Add lime juice, sugar, and mint leaves. Use a muddler to lightly crush the mint leaves and mix the ingredients to release the flavors.
Add the rum and fill the shaker with crushed ice. Shake well to combine.
Strain the mixture into a glass, filtering out the large ice chunks. Top up with sparkling water.
Garnish with lime slices and additional mint leaves.
Serve immediately to enjoy a refreshing drink with exotic tropical flavors.
