Lime and Mango Cheesecake with Lime Curd

Preheat your oven to 325°F (163°C).
In a medium bowl, mix graham cracker crumbs, sugar, and melted butter. Press the mixture into the bottom of a 9-inch springform pan. Bake for 10 minutes and let cool.
In a large bowl, beat the cream cheese and sugar until smooth. Add eggs one at a time, beating after each addition. Mix in vanilla extract, mango puree, lime zest, and lime juice until well combined.
Pour the filling over the cooled crust. Bake for 55-65 minutes, or until the center is set. Let it cool to room temperature, then refrigerate for at least 4 hours or overnight.
For the lime curd, combine lime juice, lime zest, sugar, and egg yolks in a saucepan over medium heat. Whisk constantly until the mixture thickens (about 8-10 minutes). Remove from heat and stir in butter until melted and smooth. Let it cool.
Spread the lime curd over the chilled cheesecake. Arrange fresh mango slices on top and garnish with lime zest.
