Goat Cheese Stuffed Artichoke Bottoms

Preheat your oven to 375°F (190°C).
In a mixing bowl, combine the goat cheese, Parmesan cheese, chopped parsley, lemon juice, lemon zest, salt, and pepper. Mix until well combined.
Gently stuff each artichoke bottom with the goat cheese mixture, pressing it into the cavities.
Place the stuffed artichoke bottoms on a baking sheet lined with parchment paper.
Drizzle olive oil over the stuffed artichokes.
Bake in the preheated oven for 10-12 minutes, or until the cheese is melted and bubbly.
Remove from the oven and let cool for a few minutes before serving.
Garnish with additional chopped parsley, if desired.
