Prepare the Cinnamon Rolls:
Preheat the oven to 350°F (175°C).
Bake the cinnamon rolls according to package instructions. Set aside to cool, then slice each roll in half horizontally.
Prepare the Apple Filling:
In a large skillet, melt the butter over medium heat.
Add the sliced apples, granulated sugar, brown sugar, cinnamon, nutmeg, and lemon juice. Cook, stirring occasionally, until the apples are tender and the mixture is caramelized, about 10 minutes. Set aside to cool.
Prepare the Caramel Sauce:
In a medium saucepan, combine the granulated sugar and water. Cook over medium heat, swirling the pan occasionally, until the sugar dissolves and turns a deep amber color.
Remove from heat and carefully whisk in the heavy cream, butter, vanilla extract, and salt until smooth. Set aside to cool.
Prepare the Cream Cheese Filling:
In a large mixing bowl, beat the cream cheese, powdered sugar, and vanilla extract until smooth.
In a separate bowl, whip the heavy cream until stiff peaks form.
Gently fold the whipped cream into the cream cheese mixture until well combined.
