Preheat the oven to 350°F (175°C). Grease a 9x13-inch baking dish.
In a large bowl, combine the peach slices, bourbon, granulated sugar, cornstarch, vanilla extract, and ground cinnamon. Toss gently to coat the peaches evenly. Pour the mixture into the prepared baking dish.
In a separate bowl, mix together the oats, flour, brown sugar, ground cinnamon, and salt. Stir in the melted butter until the mixture resembles coarse crumbs. Sprinkle the oat mixture evenly over the peach filling.
Bake in the preheated oven for 40-45 minutes, or until the topping is golden brown and the filling is bubbly.
Allow the crisp to cool for 10-15 minutes before serving. Serve warm, optionally with a scoop of vanilla ice cream.
