Prepare the Crust:
Preheat the oven to 350°F. Spray a 9x13” pan with non-stick cooking spray.
In a large bowl, mix cake mix, butter, and 1 egg with a fork until you get a crumbly mixture.
Set aside 1 1/2 cups of crumbs for topping.
Press the remaining crumbs on the bottom of the prepared pan; bake for 8 minutes. Prepare the Peach Layer:
Dice the drained peaches and spread them over the top of the crust. Prepare the Cream Cheese Layer:
In the bowl of an electric mixer on medium-high speed, beat the cream cheese, sugar, remaining egg, and vanilla extract until smooth.
Spread this mixture over the top of the peaches. Finish and Bake:
Sprinkle with the reserved crumbs.
Bake for 30 minutes. Chill and Serve:
Chill for at least 30 minutes before serving.
Serves 12. Store leftovers in the refrigerator.
