Chocolate Raspberry Yogurt Parfait

In a medium bowl, mix the Greek yogurt with cocoa powder, honey (or maple syrup), and vanilla extract until well combined and smooth.
In 4 serving glasses or jars, layer the chocolate yogurt mixture, fresh raspberries, and granola. Start with a layer of chocolate yogurt, followed by a layer of raspberries, then a layer of granola.
Repeat the layers until the glasses or jars are filled.
Top each parfait with a few extra raspberries and a sprinkle of dark chocolate shavings.
Garnish with fresh mint leaves and serve immediately, or refrigerate for up to 2 hours before serving.
