1/2 cup all-purpose flour
1/3 cup granulated sugar
1/4 cup cold butter, cubed
1 teaspoon ground cinnamon
Directions:
Preheat the oven to 350°F (175°C). Grease and flour an 8-inch baking pan.
In a large bowl, whisk together the flour, granulated sugar, brown sugar, baking powder, baking soda, salt, cinnamon, nutmeg, and cloves.
In another bowl, beat the eggs, sweet potato, vegetable oil, and vanilla extract until smooth.
Mix the wet ingredients into the dry ingredients until just combined. Stir in the milk.
Pour the batter into the prepared pan.
For the streusel topping, combine flour, sugar, butter, and cinnamon in a bowl. Use your fingers to mix until crumbly.
Sprinkle the streusel evenly over the batter.
Bake for 45-50 minutes or until a toothpick inserted in the center comes out clean.
Let cool before slicing.
