S'mores Cheesecake with Graham Cracker Crust

Prepare the Crust:

Preheat your oven to 325°F (163°C). Grease a 9-inch springform pan and line the bottom with parchment paper.
In a medium bowl, mix the graham cracker crumbs, melted butter, and granulated sugar until well combined.
Press the mixture firmly into the bottom of the prepared pan to form an even crust.
Bake the crust for 10 minutes, then set aside to cool.
Make the Cheesecake Filling:

In a large mixing bowl, beat the softened cream cheese and granulated sugar until smooth and creamy.
Add the vanilla extract and mix until incorporated.
Add the eggs one at a time, beating well after each addition.
Mix in the sour cream and heavy cream until the filling is smooth.
Divide the batter into two equal parts. Stir the melted chocolate into one half of the batter.
Assemble and Bake the Cheesecake:

Pour the plain cheesecake batter over the cooled crust and spread evenly.
Gently spoon the chocolate cheesecake batter on top, swirling slightly with a knife to create a marbled effect.
Bake in the preheated oven for 50-60 minutes, or until the edges are set but the center still jiggles slightly when shaken.
