In a small bowl, mix the Greek yogurt with honey and vanilla extract until well combined.
In 4 serving glasses or jars, layer the granola, yogurt mixture, and fresh blackberries. Start with a layer of granola, followed by a layer of yogurt, then a layer of blackberries.
Repeat the layers until the glasses or jars are filled.
Top each pot with a few extra blackberries and a sprig of fresh mint.
Serve immediately, or refrigerate for up to 2 hours to let the flavors meld.
