Directions:
Layer the salad: In a large bowl, combine coleslaw mix, chicken, almonds (or cashews), cranberries, red onion, sesame seeds, sesame sticks (optional), and cilantro. Add the mandarin oranges.
Make the dressing: In a blender, mix olive oil, balsamic vinegar, soy sauce, garlic, honey, ginger, and sesame oil. Add 3 tablespoons of water and blend until smooth.
Before serving: Pour the dressing over the salad mixture lightly, toss gently, and serve. Adjust the amount of dressing to your liking.
