In a medium bowl, mix the Greek yogurt with honey (or maple syrup) and vanilla extract until well combined.
In 4 serving glasses or jars, layer the yogurt mixture, toasted coconut, sliced almonds, and mini dark chocolate chips. Start with a layer of yogurt, followed by a layer of toasted coconut, a layer of sliced almonds, and a sprinkle of mini dark chocolate chips.
Repeat the layers until the glasses or jars are filled.
Top each parfait with dark chocolate shavings and a few extra slices of toasted almonds.
Garnish with fresh mint leaves if desired. Serve immediately or refrigerate for up to 2 hours before serving.
