How to prepare Spinach Croquettes.
Wash the spinach well and remove the large stems, then soak the leaves in boiling water for a few minutes. Drain well, squeezing them. Chop the leaves finely. In a medium saucepan, heat the ghee or oil and fry the paprika, ginger, chillies and then the ground spices. Add the crumbled cottage cheese, stir to fry for a minute. Then add the spinach. Add the salt and stir the ingredients well with a spoon. Put the mixture on a flat surface, add the pea flour and knead well. Once kneaded, form 2.5 cm balls and fry them in ghee or oil until they turn slightly brown. Then place the balls in a bowl so that they drain. You can serve them accompanied by tomato sauce, or
