Peruvian Chaufa Rice

Instructions:

In a wok or large skillet, heat some vegetable oil over medium-high heat. Add the chicken and shrimp, seasoning with salt and pepper. Cook until well cooked. Remove and reserve.

In the same wok, add a little more oil and fry the minced garlic until fragrant.

Add carrot and peas, sautéing until tender.

Push the vegetables to one side of the wok and add the egg, breaking it and mixing until cooked.

Add the rice, chicken, and cooked shrimp to the wok, mixing well.

Pour in the soy sauce and mix everything evenly until the rice becomes a uniform color.

Finally, add the green onions and sauté for a couple more minutes. Adjust salt and pepper to taste.
