Prepare the Potatoes:

In a large bowl, combine the shredded mozzarella, grated Parmesan, garlic powder, onion powder, and chopped parsley. Mix well.
Coat the Potato Sticks:
Once the potatoes are cool enough to handle, gently toss them with the flour until they are lightly coated.
Dip each potato stick into the beaten eggs, then roll them in the cheese mixture, pressing gently to adhere.
Bread the Potato Sticks:
Dip the cheese-coated potato sticks back into the beaten eggs, then roll them in breadcrumbs until they are evenly coated.
Fry the Potato Sticks:
Heat the oil in a large skillet over medium-high heat.
Fry the potato cheese sticks in batches until they are golden brown and crispy on all sides, about 3-4 minutes per batch.
Remove and drain on paper towels. Season with salt and pepper while still hot.
