Heat a tablespoon of olive oil in a skillet over medium heat.
Crack the eggs into the skillet and cook until the whites are set but the yolks are still runny, about 3-4 minutes. Season with salt and pepper to taste.
Toast the Bread:
While the eggs are cooking, toast the slices of bread or English muffins until golden brown.
Warm the Beans:
In a small saucepan, heat the refried beans over low heat until warmed through. Stir in the ground cumin and chili powder for added flavor.
Assemble the Sandwiches:
Spread a layer of the warmed refried beans on one side of each toasted bread slice or English muffin half.
Place a cooked egg on top of the beans.
Spoon salsa over the eggs, then add avocado slices.
Sprinkle with crumbled queso fresco and chopped cilantro.
Top with the other half of the bread or English muffin.
Serve:
Serve the Huevos Rancheros Breakfast Sandwiches immediately. Add hot sauce if desired.
