In a large bowl, mix the cottage cheese, egg, sugar, and vanilla extract until well combined.
In a separate bowl, whisk together the flour, baking powder, and salt. Gradually add the dry ingredients to the cottage cheese mixture, stirring until a thick batter forms.
Heat a few tablespoons of vegetable oil in a non-stick skillet over medium heat.
Using a tablespoon, drop spoonfuls of the batter into the skillet, gently flattening them with the back of the spoon to form small pancakes.
Cook the pancakes for about 2-3 minutes on each side, or until golden brown and cooked through.
Remove the pancakes from the skillet and place them on a paper towel-lined plate to drain any excess oil.
Serve warm, dusted with powdered sugar and accompanied by fresh berries and sour cream if desired.
