Dulce de Leche Chocolate Mousse Jars

In a small saucepan, heat the chocolate chips and butter over low heat until melted and smooth. Remove from heat and let cool slightly.
In a medium bowl, beat the egg yolks with the sugar until pale and thick. Slowly add the melted chocolate mixture, stirring continuously. Add the vanilla extract and pinch of salt.
In a separate bowl, beat the egg whites until stiff peaks form. Gently fold the egg whites into the chocolate mixture until fully incorporated.
In another bowl, whip the heavy cream until stiff peaks form. Divide the whipped cream into two portions. Fold one portion into the chocolate mixture to make the chocolate mousse.
In a separate bowl, mix the dulce de leche with the second portion of whipped cream to make the dulce de leche mousse.
Layer the chocolate mousse and dulce de leche mousse into small jars or cups, starting with the chocolate mousse.
Chill in the refrigerator for at least 2 hours before serving. Garnish with whipped cream and chocolate shavings.
