Creole Spiced Beef Roast with Vegetables

Preheat your oven to 350°F (175°C).
Season the beef roast with Creole seasoning, black pepper, onion powder, garlic powder, celery flakes, and dried parsley.
In a skillet over medium heat, sear the beef on all sides until browned.
Transfer the beef to a casserole dish. Add chopped potatoes and enough water to slightly cover the bottom of the dish.
Cover with foil and bake for 2.5 hours.
Remove foil, add baby carrots, and continue to bake uncovered for an additional 30 minutes or until vegetables are tender.
