Preheat your oven to 350°F (175°C). Grease a 9x9-inch baking dish.
Place the cubed bread in a large bowl.
In a separate bowl, whisk together the coconut milk, whole milk, granulated sugar, eggs, and vanilla extract. Pour this mixture over the bread cubes and let sit for 10 minutes to soak.
In a small bowl, combine the softened cream cheese and melted butter until smooth. Gently fold this into the bread mixture along with the shredded coconut.
Pour the bread mixture into the prepared baking dish.
In a small bowl, mix together the brown sugar, shredded coconut, and chopped pecans. Sprinkle this mixture evenly over the top of the bread pudding.
Bake for 40-45 minutes, or until the top is golden and a knife inserted into the center comes out clean.
Allow to cool slightly before serving.
