1 1/2 cups water
4 large egg yolks
2/3 cup freshly squeezed lemon juice (about 4 lemons)
2 tablespoons unsalted butter
1 tablespoon lemon zest
For the Meringue:
4 large egg whites
1/2 teaspoon cream of tartar
1/2 cup granulated sugar
1/2 teaspoon vanilla extract
