Strawberry Pretzel Crusted Cheesecake Delight

In a medium bowl, mix the pretzel crumbs, melted butter, and granulated sugar until well combined. Press the mixture firmly into the bottom of a 9-inch springform pan to form the crust. Chill in the refrigerator while preparing the filling.
In a large bowl, beat the softened cream cheese until smooth and creamy. Add the powdered sugar and vanilla extract, and beat until well combined.
In a separate bowl, whip the chilled heavy cream until stiff peaks form.
Gently fold the whipped cream into the cream cheese mixture until smooth and evenly combined.
Spread half of the cream cheese mixture over the pretzel crust.
Evenly spread the strawberry jam over the cream cheese layer.
Spread the remaining cream cheese mixture over the strawberry jam layer.
Arrange the sliced strawberries on top of the cheesecake.
Chill the cheesecake in the refrigerator for at least 4 hours or until set.
Before serving, garnish with fresh mint leaves.
