For the Coconut Bars:
Preheat the Oven:
Preheat your oven to 350°F (175°C). Line a 9x13-inch baking pan with parchment paper or lightly grease it.
Cream the Butter and Sugars:
In a large mixing bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
Add the Eggs and Extracts:
Beat in the eggs one at a time, then add the vanilla extract and coconut extract, mixing until well combined.
Mix Dry Ingredients:
In a separate bowl, whisk together the flour, baking powder, baking soda, and salt.
Combine Wet and Dry Ingredients:
Gradually add the dry ingredients to the wet mixture, mixing until just combined. Stir in the shredded coconut.
Bake the Bars:

Gradually add the powdered sugar, mixing on low speed. Add the lime zest, fresh lime juice, and vanilla extract. Increase the speed and beat until light and fluffy. If the frosting is too thick, add milk one tablespoon at a time until desired consistency is reached.
Tips:
Toasted Coconut: To toast coconut flakes, spread them in an even layer on a baking sheet and bake at 350°F (175°C) for 5-7 minutes, stirring occasionally, until golden brown.
