Peanut Butter & Fluff Cups Recipe

Prepare the Chocolate Shell:
Melt the chocolate chips with the coconut oil in a microwave-safe bowl or over a double boiler until smooth. Stir well to ensure it’s completely melted and combined.
Use a spoon to coat the bottoms and sides of each muffin liner with a generous layer of melted chocolate. Make sure to cover them well to form a good cup base.
Chill in the refrigerator for about 15 minutes or until the chocolate has set.
Make the Peanut Butter Filling:
In a mixing bowl, combine creamy peanut butter, powdered sugar, vanilla extract, and a pinch of salt. Stir until the mixture is smooth and well combined.
Spoon a small amount of the peanut butter mixture into each chilled chocolate cup. Press down slightly to flatten and make room for the fluff.
Add the Marshmallow Fluff:
Spoon marshmallow fluff over the peanut butter layer, filling up to just below the top edge of the chocolate shell.
If necessary, use a second spoon or a small spatula to help smooth out the fluff layer.
Seal the Cups:
Reheat the remaining chocolate if it has set. Spoon the melted chocolate over the top of the fluff to seal the cups, making sure the chocolate meets the edges to enclose the filling completely.
Tap the tray lightly to remove any air bubbles and to ensure the top layer is smooth.
Chill and Serve:
Refrigerate the peanut butter and fluff cups for at least 30 minutes or until the chocolate is firm.
Once set, remove the cups from the liners and enjoy!
