No Bake Key Lime Cheesecake

In a medium bowl, mix the graham cracker crumbs, melted butter, and granulated sugar until well combined.
Press the mixture firmly into the bottom of a 9-inch springform pan.
Refrigerate while you prepare the filling.

In a large mixing bowl, beat the softened cream cheese until smooth and creamy.
Add the sweetened condensed milk, key lime juice, key lime zest, and vanilla extract.
Beat until fully combined and smooth.

Pour the filling over the chilled crust.
Spread evenly with a spatula.
Refrigerate for at least 4 hours, or until set. For best results, chill overnight.
Prepare the Topping:
In a medium bowl, whip the heavy cream and powdered sugar together until stiff peaks form.
Spread the whipped cream over the set cheesecake.
Garnish and Serve:
Garnish with key lime slices or additional zest if desired.
Carefully remove the cheesecake from the springform pan.
Slice and serve chilled.
