Mini No Bake Key Lime Pie Recipe

In a medium bowl, combine graham cracker crumbs and melted butter. Press the mixture firmly into the bottoms of mini tart pans or use pre-made mini graham cracker crusts. Set aside.
In a large bowl, beat the softened cream cheese until smooth. Add the sweetened condensed milk, fresh key lime juice, key lime zest, and vanilla extract. Beat until well combined and smooth.
Spoon the key lime mixture into the prepared mini crusts, filling them evenly.
In a separate bowl, whip the heavy cream until stiff peaks form. Add the powdered sugar and mix until well combined.
Top each mini pie with a dollop of whipped cream.
Garnish with additional key lime zest.
Chill the mini pies in the refrigerator for at least 2 hours or until set.
