Preheat your Belgian waffle maker and lightly grease it.
In a large bowl, whisk together the flour, sugar, baking powder, and salt.
In a separate bowl, beat the eggs and then add the milk, melted butter, and vanilla extract. Mix well.
Pour the wet ingredients into the dry ingredients and stir until just combined.
Pour the batter into the preheated waffle maker and cook according to the manufacturer’s instructions until golden brown and crispy. Repeat until you have enough waffles to stack into a cake (typically 4-6 waffles).
Make the Maple Cream Filling:
In a medium bowl, whip the heavy cream until soft peaks form.
Add the maple syrup and mascarpone cheese (if using), and continue to whip until stiff peaks form.
Prepare the Maple Glaze:
In a small bowl, whisk together the powdered sugar and maple syrup.
Add milk, a teaspoon at a time, until the glaze reaches a drizzling consistency.
Assemble the Waffle Cake:
Place the first waffle on a serving plate. Spread a layer of the maple cream filling on top.
Place the next waffle on top and repeat the process, adding a layer of maple cream filling between each waffle.
Continue layering until all the waffles are stacked.
Top It Off:
Pour the maple glaze over the top of the waffle cake, allowing it to drip down the sides.
Garnish with fresh berries and chopped nuts if desired.
Drizzle additional maple syrup over the top for extra sweetness.
Serve:
This Maple Belgian Waffle Cake is perfect for breakfast, brunch, or dessert, and it's sure to impress with its delicious layers and rich maple flavor. Enjoy!
