Georgia Peach Crumble Cheesecake

Prepare the Crust:
Combine graham cracker crumbs, melted butter, and sugar in a bowl. Press the mixture firmly into the bottom of a 9-inch springform pan. Chill in the refrigerator while preparing the filling.
Make the Peach Filling:
In a saucepan over medium heat, combine sliced peaches, brown sugar, cinnamon, and lemon juice. Cook for 5-7 minutes until the peaches are soft and the sauce is slightly thickened. Set aside to cool.
Make the Cheesecake Filling:
Beat the cream cheese with granulated sugar and vanilla extract until smooth.
Add eggs one at a time, fully incorporating each before adding the next.
Stir in sour cream. Mix until smooth.
Assemble the Cheesecake:
Pour half of the cheesecake filling over the crust.
Spoon the peach filling evenly over the cheesecake layer.
Pour the remaining cheesecake filling over the peach layer.
