Cuban Chicken and Black Bean Quinoa Bowls with Fried Bananas

1/4 cup fresh cilantro, chopped
1 lime, juiced
1 avocado, sliced
Additional lime wedges for serving
Directions:
In a bowl, toss the chicken with olive oil, cumin, paprika, garlic powder, salt, and pepper.
In a skillet over medium heat, cook the chicken until golden and cooked through, about 6-8 minutes. Set aside.
In the same skillet, add quinoa and chicken broth. Bring to a boil, then cover and simmer for 15 minutes, or until quinoa is fluffy.
Stir in black beans and cooked chicken; heat through.
In another skillet, melt butter over medium heat and fry the banana slices until golden on both sides.
To assemble the bowls, divide the quinoa mixture among bowls, top with fried bananas, avocado slices, a sprinkle of cilantro, and a squeeze of lime juice.
