Classic Homemade Apple Pie

In a large bowl, combine the flour and salt.
Cut in the butter until the mixture resembles coarse crumbs.
Gradually add ice water, tossing with a fork until the dough holds together when pressed.
Divide the dough in half, shape each half into a disk, wrap in plastic wrap, and refrigerate for at least 1 hour.
Prepare the Filling:
In a large bowl, toss the apples with lemon juice.
In a separate bowl, combine the granulated sugar, brown sugar, flour, cinnamon, nutmeg, and allspice.
Add the sugar mixture to the apples and toss to coat.
Assemble the Pie:
Preheat the oven to 425°F (220°C).
On a lightly floured surface, roll out one disk of dough to fit a 9-inch pie plate. Transfer the dough to the pie plate.
Fill the crust with the apple mixture and dot with butter.
Roll out the second disk of dough and place it over the filling. Trim, seal, and flute the edges. Cut slits in the top crust to allow steam to escape.
Bake the Pie:
Place the pie on a baking sheet and bake for 45-50 minutes, or until the crust is golden brown and the filling is bubbly.
If the edges of the crust begin to brown too quickly, cover them with foil.
Let the pie cool on a wire rack before serving.
