Cheesesteak Tortellini in Rich Provolone Sauce

Prepare the Tortellini:
Cook the cheese tortellini according to package instructions. Drain and set aside.
Cook the Beef and Vegetables:
In a large skillet, heat olive oil over medium-high heat.
Add the sliced beef and cook until browned. Remove from the skillet and set aside.
In the same skillet, add the bell pepper, onion, mushrooms, and garlic. Cook until the vegetables are tender, about 5-7 minutes. Season with salt and pepper.
Return the cooked beef to the skillet and stir to combine with the vegetables. Set aside.
Prepare the Provolone Sauce:
In a medium saucepan, melt the butter over medium heat.
Add the flour and whisk constantly for about 1 minute to form a roux.
Gradually whisk in the milk and continue to cook, whisking constantly, until the sauce thickens, about 3-5 minutes.
Remove from heat and stir in the shredded provolone and grated Parmesan cheese until melted and smooth. Season with salt and pepper to taste.
Combine and Serve:
Add the cooked tortellini to the skillet with the beef and vegetables. Pour the provolone sauce over the top and stir gently to combine.
Cook over low heat until everything is heated through.
Serve hot, garnished with additional Parmesan cheese if desired.
