Black Forest Cheesecake Bars

Preheat your oven to 325°F (165°C). Line a 9x9-inch baking pan with parchment paper, leaving some overhang for easy removal.
In a medium bowl, mix together the chocolate cookie crumbs and melted butter until the crumbs are fully coated.
Press the mixture firmly into the bottom of the prepared pan to form an even layer. Bake for 10 minutes, then remove from the oven and let cool slightly.
Make the Cheesecake Layer:
In a large bowl, beat the softened cream cheese and granulated sugar until smooth and creamy.
Add the eggs one at a time, beating well after each addition.
Mix in the vanilla extract and sour cream until fully combined.
Pour the cheesecake batter over the baked crust, spreading it evenly.
Bake the Cheesecake:
Bake for 30-35 minutes, or until the center is set and the edges are lightly golden.
Remove from the oven and let cool to room temperature, then refrigerate for at least 2 hours or until fully chilled.
Add the Cherry Topping:
Once the cheesecake is chilled, spread the cherry pie filling evenly over the top.
Prepare the Chocolate Ganache:
In a small saucepan, heat the heavy cream over medium heat until it just begins to simmer.
Remove from heat and add the chopped chocolate. Let sit for 2-3 minutes, then stir until smooth and glossy.
Drizzle the ganache over the cherry topping in a decorative pattern.
Serve:
Use the parchment paper overhang to lift the cheesecake out of the pan. Cut into bars and serve chilled. Enjoy!
