Southern Collard Green Potato Stew

Heat olive oil in a large pot over medium heat. Add onions and garlic and sauté until onions are translucent, about 5 minutes.
Add potatoes and cook for an additional 5 minutes, stirring occasionally.
Stir in chopped collard greens, vegetable broth, smoked paprika, and thyme. Bring to a boil, then reduce heat to low and simmer for about 20-25 minutes, or until potatoes are tender and stew has thickened.
Season with salt, pepper, and optional red pepper flakes. Serve hot.
