S’mores Crêpe Cake

Make the Crêpes:
In a medium bowl, whisk together the flour, sugar, and salt.
In another bowl, mix the milk, eggs, melted butter, and vanilla extract until well combined.
Gradually add the wet ingredients to the dry ingredients, whisking until smooth.
Heat a non-stick skillet over medium heat. Lightly butter the skillet, then pour about 1/4 cup of batter into the center, swirling to spread evenly.
Cook for 1-2 minutes on each side, or until lightly golden. Repeat with remaining batter. Set aside to cool.
Make the Marshmallow Filling:
In a large bowl, whip the marshmallow fluff and heavy cream together until smooth and fluffy. Set aside.
Make the Chocolate Ganache:
Heat the heavy cream in a saucepan over medium heat until it begins to simmer.
Pour the hot cream over the chopped chocolate in a bowl. Let sit for a minute, then stir until smooth. Allow to cool to room temperature.
Assemble the Cake:
Place one crêpe on a serving plate. Spread a thin layer of marshmallow filling over the crêpe.
Add another crêpe on top and spread a thin layer of chocolate ganache. Repeat the layers, alternating between marshmallow filling and chocolate ganache, until all the crêpes are used.
Spread the remaining ganache on the top of the cake and let it drip down the sides.
