Portokalopita - Greek Orange Cake with Syrup

Directions:
Prepare the Phyllo Dough:
Preheat your oven to 350°F (175°C).
Tear the phyllo dough into small pieces and spread them out on a baking sheet. Bake for 10-15 minutes, until dried but not browned. Set aside to cool.
Make the Cake Batter:
In a large mixing bowl, whisk together the sugar, Greek yogurt, vegetable oil, eggs, baking powder, orange zest, and vanilla extract until well combined.
Fold the dried phyllo dough pieces into the batter until evenly distributed.
Bake the Cake:
Grease a 9x13 inch baking dish and pour in the batter, spreading it out evenly.
Bake for 40-45 minutes, until golden brown and a toothpick inserted into the center comes out clean.
Prepare the Syrup:
While the cake is baking, combine the water, sugar, orange slices, and cinnamon stick in a saucepan. Bring to a boil, then reduce the heat and simmer for 10 minutes.
Remove from heat and discard the orange slices and cinnamon stick.
Add the Syrup:
When the cake is done, remove it from the oven and immediately pour the hot syrup over the top.
Allow the cake to cool completely and absorb the syrup before serving.
