Orange Chicken Fried Rice

Heat 1 tablespoon oil in a large skillet or wok over medium-high heat. Add the chicken breast and season with salt and pepper. Cook until browned and cooked through, about 5-7 minutes. Remove from skillet and set aside.
In the same skillet, add another tablespoon of oil. Sauté onions and garlic until translucent.
Push the onion to the side, add the remaining oil and pour in the beaten eggs. Scramble the eggs until fully cooked.
Add the peas and carrots, cooked chicken, and rice. Stir to combine.
Pour the soy sauce, orange juice, and orange zest over the rice mixture. Stir fry for an additional 3-4 minutes or until everything is heated through and evenly coated.
Garnish with green onions and sesame seeds before serving.
