Maple Bacon Cheesecake Delight

8 slices bacon, cooked and crumbled
1/4 cup pure maple syrup
Directions:
Preheat your oven to 325°F (163°C). Line the bottom of a 9-inch springform pan with parchment paper and grease the sides.
In a medium bowl, combine graham cracker crumbs, sugar, and melted butter. Press the mixture firmly into the bottom of the prepared pan to form the crust.
In a large bowl, beat the cream cheese until smooth. Add sugar, maple syrup, and vanilla extract; beat until well combined.
Add eggs one at a time, beating after each addition just until blended. Mix in sour cream until smooth.
Pour the cheesecake filling over the crust and smooth the top.
Bake for 50-60 minutes or until the center is set. Turn off the oven, crack the door, and let the cheesecake cool in the oven for 1 hour.
Refrigerate the cheesecake for at least 4 hours or overnight.
Before serving, sprinkle crumbled bacon over the top and drizzle with maple syrup.
