Lemon Caper Chicken Piccata Delight

Slice each chicken breast in half horizontally to create two thin cutlets. Season both sides with salt and pepper.
Dredge the chicken cutlets in flour, shaking off any excess.
In a large skillet over medium-high heat, melt 2 tablespoons of butter with 3 tablespoons of olive oil.
Add the chicken to the skillet and cook for 3-4 minutes per side, until golden brown and cooked through. Remove chicken from the skillet and set aside.
In the same skillet, add lemon juice, chicken stock, and capers. Bring the mixture to a boil, scraping up any browned bits from the bottom of the pan.
Reduce the heat and let the sauce simmer for 5 minutes. Stir in the remaining 2 tablespoons of butter.
Return the chicken to the skillet and simmer for an additional 5 minutes, until heated through and coated with the sauce.
Garnish with fresh parsley and serve immediately.
